Lime, Chilli and Garlic Broccoli salad

This morning I woke up to the fact that I had two broccoli florets in the fridge and two that came in the veg box the day before. Being swamped with all this broccoli meant I had to come up with a recipe that used up a lot of broccoli but also tasted nice and looked pretty. This is when the salad was born.

For this lovely dish you will need…

  • Two broccoli florets P1020473
  • Half an aubergine
  • One lime
  • One red pepper
  • One chilli
  • Three cloves of garlic
  • Salt and pepper to taste
  • Half a teaspoon of saffron
  • One teaspoon of paprika




First you will need to steam the broccoli for 6 minutes. Then pop this in a frying pan with oil, the juice and skin from half a lime, 2 cloves of garlic crushed and one chilli sliced thinly. fry this for 3 minutes.

Next slice half an aubergine into pieces around one cm cubed along with juice from half a lime, a teaspoon of paprika and s sprinkle of saffron and fry this for 7 minutes or untill aubergine is cooked through.

You will also need to slice your red peppers into quarters and grill it for 10 minutes or untill the skin chars then place it in a bag so it steams the skin off more easily.

Finally mix all of the ingredients together and toss on some sunflower seeds and pine nuts and tuck in!
